TOMATO BRAISED TILAPIA

Ingredients

  • 4 tilapia (filleted)
  • 1/4 teaspoon St Louis salt
  • 1 tablespoon lemon juice
  • 2 B-well cooking oil
  • 1 small red onion, chopped
  • 410g Rhodes chopped and peeled tomatoes
  • 1/4 cup Rhodes tomato paste
  • 1 tablespoon St Louis mixed herbs
  • 1/2 cup Knorrox chicken broth
  • 1 teaspoon Brito’s crushed garlic

Method

  1. Sprinkle the tilapia fillets with salt and drizzle with lemon juice.
  2. In a large skillet, heat oil over medium-high heat. Add onion, cook and stir until tender.
  3. Add tomatoes, broth, tomato paste, garlic powder and mixed herbs.
  4. Cook and stir 2-3 minutes longer.
  5. Place fillets over tomato mixture.
  6. Cook covered for 6-8 minutes or until fish flakes easily with a fork.
