
TOMATO BRAISED TILAPIA
Ingredients
- 4 tilapia (filleted)
- 1/4 teaspoon St Louis salt
- 1 tablespoon lemon juice
- 2 B-well cooking oil
- 1 small red onion, chopped
- 410g Rhodes chopped and peeled tomatoes
- 1/4 cup Rhodes tomato paste
- 1 tablespoon St Louis mixed herbs
- 1/2 cup Knorrox chicken broth
- 1 teaspoon Brito’s crushed garlic
Method
- Sprinkle the tilapia fillets with salt and drizzle with lemon juice.
- In a large skillet, heat oil over medium-high heat. Add onion, cook and stir until tender.
- Add tomatoes, broth, tomato paste, garlic powder and mixed herbs.
- Cook and stir 2-3 minutes longer.
- Place fillets over tomato mixture.
- Cook covered for 6-8 minutes or until fish flakes easily with a fork.
- Enjoy with pasta, rice, or pap
