BRITOS BEEF POTJIE
PREP 30 MINS | COOK 1H20 HOUR | SERVES 6 – 8
Ingredients
- 45ml sunflower oil
- 1 large onion, peeled and chopped
- 3 large cloves garlic, crushed
- 2 leeks, sliced
- 1kg Britos beef stewing steak, cubed
- 100g tomato paste
- 4 carrots, peeled and cubed
- 2 punnets button mushrooms, halved
- 4 mielies, each cut into 3 pieces
- 5ml Robertsons Thyme
- 1 x Knorr Beef Stock Pot
- 1 lt water
- 1 large handful green beans, halved (topped)
- 1 x Knorr Rich Beef & Tomato Soup
Method
- Fry the onion, garlic and leeks in oil until soft ensure your potjie pot is not too hot
- Add the beef and fry until well browned
- Add the tomato paste, stir well
- Add the carrots, mushrooms, mielies, thyme, Knorr Beef Stock Pot and water
- Do not stir your pot – allow the vegetables to sit in layers on top of the meat and allow to simmer with the lid on for 1 ½ hours or until the beef is tender
- Just before done mix the contents of the sachet of Knorr Rich Beef & Tomato Soup with some water to make a smooth paste then stir into the potjie together with the green beans and allow to simmer until the green beans are tender and the sauce has thickened
- Serve with rice
