CHICKEN FRIED RICE

Ingredients

  • 4 tablespoons B-well canola/cooking oil
  • 500g boneless, skinless chicken breasts, diced
  • 1 1/2 cups frozen vegetables (straight from the freezer)
  • 3 onions, sliced
  • 1/2 teaspoon Brito’s crushed garlic
  • 4 cups cooked Spekko rice
  • 3 to 4 tablespoons Worcestershire
  • St Louis salt and pepper to taste

Method

  1. In a large pan, add the oil, chicken, and cook over medium-high heat for about 3 to 5 minutes, flipping intermittently so all sides cook evenly.
  2. Remove chicken and set aside.
  3. Add the mixed veggies, onions, and cook for about 2 minutes, or until vegetables begin to soften, stir intermittently.
  4. Add the crushed garlic and cook for 1 minute.
  5. Add the chicken, rice, evenly drizzle with Worcestershire sauce, and salt and pepper
  6. Stir to combine. Cook for about 2 minutes, or until chicken is reheated through.
