Eisbein Recipe


  • 1 onion, quartered
  • 1 carrot, chopped
  • 1 bay leaf
  • Water
  • 2 Brito’s Eisbeins

Cooking Steps: 

  1. Start by placing the eisbeins into a large cooking pot.
  2. Add the bay leaf, chopped onion, and carrot to the pot.
  3. Pour enough water into the pot to cover the eisbeins.
  4. Place the pot on the stovetop and bring the mixture to a boil.
  5. Once it’s boiling, reduce the heat and let it simmer for approximately 2 hours.
  6. When the eisbeins become tender, carefully remove them from the pot.
  7. Gently wipe the meat with a clean cloth and then make diagonal cuts on the skin. Sprinkle salt over the skin for seasoning.
  8. For a crispy texture, smoke the pork shanks on a hot grill. Turn them regularly to ensure even crispiness.
  9. To enhance the flavour, consider serve the dish with a side of apple puree and roasted potatoes or mash.
