MIXED SEAFOOD SKILLET

Serves: 4

Ingredients

  • 1 tablespoon olive oil
  • ½ a white onion, diced
  • 1 clove garlic, minced
  • ½ a red bell pepper/capsicum, diced
  • ½ tablespoon turmeric
  • ½ teaspoon smoked paprika
  • A pinch cayenne pepper
  • 1 cup uncooked white rice
  • 1½ cups Knorrox chicken stock
  • ½ cup frozen mixed vegetables
  • 250g Brito’s frozen seafood mix
  • ½ a fresh lemon or a couple squirts of St. Louis lemon juice
  • Salt and black pepper to taste
  • Handful fresh parsley, chopped

Method

  • In a large skillet over medium heat, toss in the olive oil, onion, garlic and sauté until onions are translucent
  • Add the red pepper and sauté for another minute or 2
  • Next, add the uncooked rice, paprika, and cayenne and stir to combine, then pour in the chicken stock and stir
  • Cover skillet with lid and turn up the heat until the liquid comes to a boil; one it hits a full boil, lower the heat and let simmer for 15 mins
  • After simmering, add in the frozen seafood mix and frozen veggies and fold to combine evenly; cover with lid again until seafood is just about cooked (about 5 to 10 mins), stirring once halfway through
  • Once everything is cooked, garnish with parsley and lemon just before serving
